Kala and Srini both hail from Chennai, Tamil Nadu. They used to work as teachers and migrated to Australia in 2017. Their objective is to enjoy the retirement life with their grandchildren and to promote the “culture” of authentic Indian food to the Sunshine coast residents. Chennai Xpress is named after the popular Bollywood movie Chennai Express, which connects northern Indian to southern india. The restaurant also supports Chennai Super Kings, the local franchise of the Indian Premier League (IPL).
Taking dishes straight off the restaurant's menu and putting them into a cookbook doesn't work, because as a chef you have your own vision of what your food is, but you can't always explain it. Or you can't pick recipes that best illustrate who and where you are and what you're doing. And if the recipes don't work, you don't have a book.
Cooking is all about people. Food is maybe the only universal thing that really has the power to bring everyone together. No matter what culture, everywhere around the world, people get together to eat.
